Let’s Talk Eating Right: Spaghetti Squash Recipe

Like most people I struggle with consistently eating well. Not because I don’t want to or because I hate healthy food. I actually love many of the foods that are good for you. But when you get busy with life (whether single, married, working or a stay at home parent) it’s hard to make time to prepare the foods you really need to consume for maximum energy and health. Add to that the fact that sometimes we eat a lot of the foods that aren’t good for us because they soothe us emotionally. 

BUT, what if I told you that you CAN consistently eat right and it can be tasty and not time consuming? AND that no matter what, I keep focus on the fact that when my nutrition isn’t right, I’m not right, and so I’ve learned a thing or two about making sure that

Here’s the ingredient list for Spaghetti squash with ground turkey meat spaghetti sauce

1: Your herbs of choice. I choose: garlic powder (unsalted), onion (fresh or dried), basil, oregano, ground pepper, sea salt, chili powder

2: Cooking oil: I use coconut and olive

3: Ground turkey : 1 – 3 pounds

4: Your choice of low-sodium tomato sauce for pasta dishes

5: 1 medium to large spaghetti squash

Here’s the recipe for Spaghetti squash with ground turkey meat spaghetti sauce

1: Cook ground turkey in frying pan once you’ve heated olive oil to warm/warm-hot. Add garlic powder, onion, ground pepper and sea salt before it cooks through. Stir to evenly distribute seasonings.

2: Once meat is cooked through put the basil, oregano, chili powder and turkey meat into the sauce. Cook on medium heat about 15 – 20 minutes and stir about every 3 minutes. Place on extra low heat when it cooks through.

3: Preheat oven to 325/350 F depending on how hot your oven gets. Cut squash in half and scoop out seeds and stringy mesh attached to seeds. Spread coconut oil on surfaces of both halves of squash. You can cook it face down or face up (I cooked it face up to keep from sticking to the cooking pan. Bake in closed baking dish about 20 – 30 minutes. Check by lightly scraping a fork over soft surface. If flesh comes apart and resembles spaghetti strings, it is done. Once it’s done, scrape all the flesh out of the skin and place in separate container.

4: Once sauce is done, place a portion of your spaghetti squash on plate and top with sauce (as below)
