Let’s Talk Eating Right: Homemade Chicken Salad

If you need a healthy option for lunch or a mini-meal snack, try my homemade chicken salad. 

Here are your ingredients:

1 pound of chicken strips

3 tablespoons of olive oil

1/2 to 1 and 1/2 cups of miracle whip

1/2 to 1 cup of sweet relish

Your choice of seasonings: sea salt, ground pepper, lemon or lime juice, chili powder, onion, garlic

Cook the chicken with 1/2 to 1 cup of water, 2-3 tablespoons of olive oil, 1-2 tablespoons each of sea salt, lemon or lime juice, garlic and onion powder in a crock pot for 4 – 8 hours.

One the chicken is tender, drain it from the water and seasonings

Separate it to shredded or chunked depending on your preference

Mix in enough miracle whip and relish to make the mix solid (not soupy). Also mix in chili powder and ground pepper. 

Serve with your choice of healthy carbs (I prefer Sweet Potato and Onion Triscuits or wheat crackers) and a fruit or vegetable.
